Pacific Ocean Perch
Sebastes alutus
The most important of the west coast scorpionfishes harvested for market, the Pacific Ocean perch is also known (in the tradition of identifying rockfish by their most distinguishing features) as longjaw rockfish. In addition to its projecting lower jaw, the Pacific Ocean perch is bright red in colour with olive stippling on both sides. It can attain a length of up to 50 centimetres, and weight between 0.5 and 1.4 kilograms. They are harvested year round by almost any harvesting method, either in directed fisheries or as bycatch. Like other rockfishes, Pacific Ocean Perch is a lean fish with a snowy white flaky flesh. It is available live, fresh and frozen in a variety of product forms.
